Ingredients
  

  • 12 ounces pasta of your choice
  • 2 tablespoons olive oil
  • 3 garlic cloves minced
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers
  • 1 cup sliced zucchini
  • 1 cup cherry tomatoes halved
  • ½ cup sliced carrots
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon red chili flakes optional
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh lemon juice
  • ¼ cup reserved pasta water
  • Fresh basil or parsley for garnish

Instructions
 

Boil the Pasta

  • Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Reserve pasta water, then drain.

Heat the Olive Oil

  • Heat olive oil in a large pan over medium heat. Add minced garlic and cook briefly until fragrant.

Cook Hard Vegetables

  • Add carrots and broccoli to the pan. Cook for about three minutes until slightly tender.

Add Softer Vegetables

  • Add bell peppers and zucchini. Stir gently and cook for two more minutes.

Add Tomatoes and Seasoning

  • Add cherry tomatoes, salt, pepper, Italian seasoning, and chili flakes. Cook until tomatoes soften slightly.

Combine Pasta and Vegetables

  • Add cooked pasta to the pan. Pour in reserved pasta water to help coat everything evenly.

Finish with Lemon and Cheese

  • Add lemon juice and Parmesan cheese. Toss well until pasta looks glossy and well mixed.

Garnish and Serve

  • Remove from heat. Garnish with fresh herbs and serve warm.
