Ingredients

  • 1 cup dried chickpeas soaked overnight
  • 1 small onion chopped
  • 3 garlic cloves

  • ½ cup fresh cilantro
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon baking powder
  • 2 tablespoons all-purpose flour

Oil for frying

  • For Tahini Sauce:
  • ½ cup tahini paste
  • 2 tablespoons lemon juice
  • 2 garlic cloves minced
  • 3 tablespoons water

Salt to taste

  • For Serving:
  • 4 pita breads
  • Chopped lettuce
  • Sliced tomatoes
  • Sliced cucumbers

Instructions
 

Prepare chickpeas

  • Drain soaked chickpeas well. Do not cook them. This keeps falafel crispy after frying.

Blend falafel mixture

  • Add chickpeas, onion, garlic, herbs, and spices to food processor. Blend until coarse and slightly sticky.

Rest the mixture

  • Transfer mixture to bowl. Add baking powder and flour. Mix well and rest for ten minutes.

Shape falafel

  • Form small balls or patties using your hands. Keep them similar size for even cooking.

Heat oil

  • Heat oil in a deep pan on medium heat. Oil should be hot but not smoking.

Fry falafel

  • Carefully add falafel to hot oil. Fry until golden brown on all sides.

Drain excess oil

  • Remove falafel with slotted spoon. Place on paper towels to remove extra oil.

Make tahini sauce

  • Mix tahini, lemon juice, garlic, water, and salt. Stir until smooth and creamy.

Warm pita bread

  • Heat pita bread lightly in pan or oven. Keep them soft and warm.

Assemble pitas

  • Fill pita with falafel, vegetables, and tahini sauce. Serve immediately while warm.
