Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 3/4 cup pumpkin puree
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

Mix Dry Ingredients

  • In a large bowl, add flour, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Whisk well.

Mix Wet Ingredients

  • In another bowl, combine pumpkin puree, buttermilk, egg, melted butter, and vanilla extract. Mix until smooth.

Combine Wet and Dry

  • Pour wet ingredients into dry ingredients. Stir gently until just combined. Don’t overmix.

Preheat Skillet

  • Place a non-stick skillet on medium heat. Add a small amount of butter or oil to prevent sticking.

Pour Pancake Batter

  • Use a 1/4 cup measuring cup. Pour batter onto the skillet. Leave space between pancakes.

Cook First Side

  • Cook for 2–3 minutes. Watch for bubbles forming on top before flipping the pancake.

Flip Pancakes

  • Use a spatula to flip gently. Cook another 2 minutes until golden brown and cooked through.

Keep Warm

  • Place cooked pancakes on a plate. Cover loosely with foil to keep warm while cooking the rest.

Serve with Toppings

  • Add butter, maple syrup, or whipped cream. Sprinkle extra cinnamon or nuts if desired.

Notes

  • Use fresh pumpkin puree for a stronger pumpkin flavor.
  • Substitute almond milk for buttermilk if needed.
  • Add chocolate chips or raisins for extra sweetness.
  • Keep batter slightly lumpy for fluffier pancakes.
  • Don’t press pancakes while cooking to avoid dense texture.
