Ingredients
  

  • 1 whole beef tenderloin 1.2–1.5 kg
  • 2 tablespoons black peppercorns crushed
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon fresh rosemary optional
  • 1 teaspoon thyme optional

Instructions
 

Prepare the beef

  • Trim excess fat from beef tenderloin. Pat dry using paper towels. This helps create a better crust.

Season the meat

  • Rub salt evenly all over the beef. Let it sit for 10 minutes to absorb flavor properly.

Make peppercorn crust

  • Crush black peppercorns coarsely. Coat the beef with crushed pepper evenly for strong spicy flavor.

Sear the beef

  • Heat olive oil in a hot skillet. Sear beef on all sides until golden brown crust forms.

Add garlic butter

  • Add butter, garlic and herbs to pan. Spoon melted butter over beef for rich flavor coating.

Transfer to oven

  • Place beef on baking tray. Roast in preheated oven at 200°C until desired doneness is reached.

Check doneness

  • Use meat thermometer. Cook until 55–60°C for medium-rare or adjust to preference.

Rest and slice

  • Let beef rest for 10 minutes. Slice gently and serve with juices for best taste.
