Ingredients

  • 1 ½ cups gluten-free all-purpose flour blend
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ¾ cup sugar
  • ½ cup vegetable oil
  • ½ cup milk or dairy-free milk
  • ¾ cup chocolate chips
  • ¼ cup plain yogurt or dairy-free yogurt

Instructions

Preheat the Oven

  • Preheat your oven to 350°F. Line a muffin pan with paper liners for easy removal later.

Mix Dry Ingredients

  • In a bowl, whisk gluten-free flour, baking powder, baking soda, and salt until well combined.

Mix Wet Ingredients

  • In another bowl, whisk eggs, sugar, oil, milk, yogurt, and vanilla until smooth and creamy.

Combine Wet and Dry

  • Slowly add dry ingredients to wet ingredients. Mix gently until just combined. Do not overmix.

Add Chocolate Chips

  • Fold chocolate chips into the batter using a spatula. Spread them evenly throughout the mixture.

Fill Muffin Cups

  • Spoon batter into muffin liners. Fill each cup about three-quarters full for even baking.

Bake the Muffins

  • Bake muffins for 18 to 20 minutes. A toothpick should come out clean or with few crumbs.

Cool the Muffins

  • Remove muffins from the oven. Let them cool in the pan for ten minutes.

Serve and Enjoy

  • Transfer muffins to a cooling rack. Serve warm or at room temperature for best taste.

Notes

  • Use a gluten-free flour blend with xanthan gum included.
  • Do not overmix the batter. This helps keep muffins soft.
  • Use dairy-free milk for lactose-free muffins.
  • Add dark chocolate chips for richer flavor.
  • Sprinkle chocolate chips on top before baking for a bakery look.
  • Replace sugar with coconut sugar if desired.
  • Add chopped nuts for extra texture and crunch.
