  • 1 pre-made pie crust or homemade

For Filling

  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup milk
  • 4 oz goat cheese crumbled
  • 1/2 cup shredded mozzarella or Gruyère
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For Topping

  • 1 cup fresh arugula
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Extra honey for drizzle

Instructions
 

Preheat Oven

  • Preheat oven to 375°F (190°C). Place pie crust in a pie dish.

Prepare Filling

  • In a bowl, whisk eggs, cream, milk, honey, salt and pepper.

Add Cheese

  • Sprinkle goat cheese and shredded cheese evenly into the crust.

Pour Mixture

  • Pour egg mixture over the cheese.

Bake

  • Bake for 35–40 minutes until the center is set and top is lightly golden.

Prepare Arugula

  • Toss arugula with olive oil and lemon juice.

Serve

  • Top quiche with fresh arugula and drizzle with honey before serving.
