Ingredients
  

  • 1.5 kg beef chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 large onion chopped
  • 3 carrots chopped
  • 3 potatoes chopped
  • 3 celery stalks chopped
  • 5 garlic cloves smashed
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 1 cup water
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • Fresh parsley for garnish

Instructions
 

Season the Beef

  • Rub salt and pepper all over the beef roast evenly.

Heat the Oil

  • Heat olive oil in a large pot on medium-high heat.

Sear the Meat

  • Place beef in the pot. Brown all sides until deep golden.

Remove the Beef

  • Take beef out and set aside on a clean plate.

Cook the Onion

  • Add onion to the pot. Cook until soft and golden.

Add Vegetables

  • Add carrots, celery and garlic. Cook for two minutes.

Add Tomato Paste

  • Stir tomato paste into vegetables. Cook until rich and dark.

Pour in Liquids

  • Add beef broth and water slowly. Stir well to combine.

Add Flavor

  • Add Worcestershire sauce and soy sauce. Stir gently.

Add Herbs

  • Put bay leaves, thyme, and rosemary into the pot.

Return the Beef

  • Place beef back into the pot with the sauce.

Add Potatoes

  • Add chopped potatoes around the beef evenly.

Cover the Pot

  • Cover tightly with a lid to trap heat and steam.

Slow Cook

  • Cook in oven at 170°C (325°F) for three hours.

Check Tenderness

  • Test beef with fork. It should pull apart easily.

Rest the Meat

  • Let the roast rest for ten minutes before serving.
