Ingredients
  

  • 3 lbs beef chuck roast
  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 3 carrots chopped
  • 3 celery sticks chopped
  • 5 garlic cloves minced
  • 2 tablespoons tomato paste
  • 2 cups beef stock
  • 1 cup red wine
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1.5 teaspoons salt
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons butter
  • Fresh parsley for garnish

Instructions
 

Prepare the beef

  • Pat the beef dry. Season it with salt and pepper. This helps get a good brown crust.

Heat the pot

  • Heat olive oil in a heavy pot. Keep heat medium-high for even cooking.

Sear the beef

  • Place beef in hot oil. Brown all sides well. This builds deep flavor.

Remove the beef

  • Take beef out carefully. Place it on a clean plate to rest.

Cook the vegetables

  • Add onion, carrots and celery to the pot. Stir and cook until soft.

Add garlic

  • Add minced garlic. Cook for one minute until fragrant.

Add tomato paste

  • Stir in tomato paste. Cook for two minutes to deepen flavor.

Pour wine

  • Add red wine slowly. Scrape the pot bottom to release flavor.

Add stock

  • Pour beef stock into the pot. Mix gently with vegetables.

Add seasonings

  • Add bay leaves, thyme, Worcestershire sauce and black pepper. Stir well.

Return beef

  • Place beef back into the pot. Let it sit in the liquid.

Cover the pot

  • Cover with lid. Reduce heat to low for slow cooking.

Slow cook

  • Cook for three hours. Turn beef once during cooking.

Check tenderness

  • Pierce beef with fork. It should feel very soft.

Add butter

  • Stir in butter for smooth and rich sauce texture.

Taste sauce

  • Taste and adjust salt if needed.

Rest the beef

  • Remove beef and rest for ten minutes before slicing.

Slice meat

  • Slice beef gently against the grain.

Spoon sauce

  • Pour thick sauce over sliced beef generously.
