Ingredients
  

  • 1 lb ground beef
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 cups enchilada sauce
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 8 –10 flour tortillas
  • 2 tablespoons oil
  • Fresh cilantro for garnish optional

Instructions
 

Cook the Beef

  • Heat oil in a skillet. Add the ground beef and cook until brown and crumbly with gentle stirring.

Add Onion and Garlic

  • Add chopped onion and garlic. Cook until soft and fragrant, mixing gently for even cooking.

Season the Beef

  • Add chili powder, cumin, paprika, salt, and pepper. Stir well so the beef absorbs full flavor.

Add Some Sauce

  • Pour a little enchilada sauce into the skillet. Mix until the beef becomes juicy and flavorful.

Warm the Tortillas

  • Warm tortillas on a pan. Keep them soft so they roll easily without cracking or breaking.

Fill the Tortillas

  • Place beef in each tortilla. Add some cheese. Roll the tortillas carefully to keep filling inside.

Prepare the Baking Dish

  • Spread some enchilada sauce on the bottom. This prevents sticking and keeps the enchiladas moist.

Arrange the Enchiladas

  • Place filled tortillas seam side down. Line them neatly for even cooking and perfect presentation.

Add Sauce on Top

  • Pour the remaining sauce over them. Make sure all enchiladas are covered for a juicy result.

Add Cheese on Top

  • Sprinkle cheddar and Monterey Jack cheese over the enchiladas to make a golden, melty topping.

Bake the Dish

  • Cover with foil and bake at 350°F for 20 minutes. Remove foil and bake 5 minutes longer.

Serve Warm
