Ingredients
  

  • 2 –2.5 pounds pork belly skin on
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh sage chopped
  • 1 tablespoon fennel seeds crushed
  • 1 teaspoon black pepper
  • 2 teaspoons salt
  • Zest of 1 lemon
  • 1 tablespoon red wine vinegar optional

Instructions
 

Prepare the pork belly

  • Lay pork belly skin-side down on a cutting board. Score the flesh lightly to hold seasoning.

Mix the herb rub

  • Combine garlic, rosemary, sage, crushed fennel, lemon zest, salt and pepper in a small bowl.

Apply the rub

  • Rub the herb mixture over the scored side of the pork. Massage it gently so it sticks to the meat.

Roll the pork belly

  • Carefully roll the pork belly into a tight cylinder, keeping the skin on the outside.

Tie with kitchen twine

  • Use kitchen twine to secure the roll at intervals. This keeps the shape and ensures even cooking.

Prepare for roasting

  • Brush the skin with olive oil. Sprinkle lightly with extra salt to enhance crisping.

Preheat the oven

  • Set oven to 180°C / 350°F. Place the pork on a roasting rack in a tray.

Roast slowly

  • Cook for 2 to 2.5 hours until meat is tender and skin is crisping. Baste occasionally if necessary.

Rest the porchetta

  • Remove from oven and cover loosely with foil. Rest for 10–15 minutes to retain juices.

Serve

  • Slice carefully with a sharp knife. Serve with roasted potatoes, seasonal vegetables or a fresh green salad.

  • Ensure pork skin is dry before roasting to get a crisp crackling.
  • Add a teaspoon of chili flakes to the rub for a spicier version.
