Ingredients
  

  • 1 kg beef chuck cubed
  • 2 tablespoons flour
  • 2 tablespoons olive oil
  • 2 onions sliced
  • 3 garlic cloves minced
  • 2 carrots chopped
  • 2 tablespoons tomato paste
  • 1 bottle Guinness
  • 2 cups beef stock
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons butter
  • 1 sheet puff pastry
  • 1 egg beaten (for brushing)

Instructions
 

Prepare the beef

  • Coat beef cubes with flour, salt and pepper in a bowl.

Heat the oil

  • Heat olive oil in a large pot over medium heat.

Brown the beef

  • Add beef in batches. Brown on all sides for rich flavor.

Remove beef

  • Take beef out and set aside on a plate.

Cook onions

  • Add onions to the same pot. Cook until soft and golden.

Add garlic

  • Add garlic and stir for one minute until fragrant.

Add vegetables

  • Add carrots and cook gently for five minutes.

Add tomato paste

  • Stir in tomato paste. Cook for one minute to deepen flavor.

Add Guinness

  • Pour in Guinness slowly. Stir to lift all flavors from pot.

Add stock

  • Add beef stock and Worcestershire sauce. Mix well.

Add herbs

  • Add thyme and bay leaves. Stir gently.

Return beef

  • Put beef back into the pot. Stir well to coat.

Simmer slowly

  • Cover and simmer on low heat for 90 minutes until beef is soft.

Check thickness

  • If gravy is thin, simmer uncovered for extra thickness.

Cool slightly

  • Let filling cool before placing into pie dish.

Fill the dish

  • Spoon beef mixture into pie dish evenly.

Add pastry

  • Cover with puff pastry. Press edges to seal properly.

Brush with egg

  • Brush pastry with beaten egg for golden color.

Bake pie

  • Bake at 190°C for 30 minutes until golden and crisp.

Rest before serving

  • Let pie rest for ten minutes before cutting and serving.
