Ingredients
  

  • 3 tablespoons butter
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 1 bag 900g frozen hash browns
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1/2 teaspoon onion powder
  • 2 tablespoons all-purpose flour
  • 2 tablespoons sour cream
  • Green onions for topping
  • Crispy bacon bits for topping optional

Instructions
 

Melt the Butter

  • Melt butter in a large pot over medium heat. Let it coat the bottom evenly.

Cook the Onion

  • Add chopped onion. Cook until soft and light golden. Stir gently to avoid burning.

Add Garlic

  • Add minced garlic. Cook for one minute until fragrant and aromatic.

Add Flour

  • Sprinkle flour into pot. Stir well to form a smooth paste.

Add Hash Browns

  • Add frozen hash browns. Stir well so they mix with butter and onion base.

Pour Broth

  • Add chicken broth slowly. Stir while pouring to prevent lumps.

Add Milk and Cream

  • Pour milk and heavy cream. Mix gently until soup looks smooth and creamy.

Add Seasonings

  • Add salt, pepper, paprika, onion powder and parsley. Stir to blend flavors.

Simmer the Soup

  • Let soup simmer on low heat for twenty minutes. Stir sometimes to avoid sticking.

Add Cheese

  • Add shredded cheddar cheese. Stir until fully melted and creamy.

Add Sour Cream

  • Add sour cream. Stir gently until soup becomes extra smooth.

Final Simmer
