Ingredients

  • 1 cup finely chopped apple peeled
  • 1 ½ cups whole wheat flour

  • ½ cup honey or maple syrup
  • 2 large eggs
  • cup olive oil or coconut oil
  • ¼ cup milk or almond milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Instructions
 

Preheat the Oven

  • Preheat your oven to 350°F. Line a muffin pan with liners. Lightly grease if needed.

Prepare the Zucchini

  • Grate the zucchini finely. Squeeze out excess water using a clean kitchen towel.

Prepare the Apple

  • Peel the apple and chop it into very small pieces. This helps even baking.
