Ingredients
  

  • 6 large eggs
  • 1 cup cottage cheese
  • ½ cup milk
  • 1 cup spinach chopped
  • 1 small onion diced
  • 1 bell pepper diced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ cup shredded cheddar cheese optional
  • 1 tablespoon fresh parsley chopped for garnish

Instructions
 

Preheat oven

  • Preheat oven to 350°F (175°C). Grease a 9x9-inch baking dish lightly with oil or cooking spray.

Sauté vegetables

  • In a small pan, sauté onion and bell pepper for 3–4 minutes until slightly soft. Set aside.

Beat eggs

  • In a mixing bowl, whisk together eggs, cottage cheese and milk until smooth and creamy.

Season

  • Add salt, black pepper, garlic powder, and paprika to the egg mixture. Stir gently to combine.

Add vegetables

  • Mix sautéed onion and bell pepper into the egg mixture. Add chopped spinach and fold gently.

Pour into baking dish

  • Pour the mixture into the greased baking dish. Spread evenly to fill the dish.

Add cheese

  • Sprinkle shredded cheddar on top if using. This adds flavor and a golden crust.

Bake

  • Bake in preheated oven for 30–35 minutes. Eggs should be set and top slightly golden.

Cool slightly

  • Remove from oven and let cool for 5 minutes. This helps it set further for easy slicing.

Garnish and serve

  • Sprinkle fresh parsley on top. Slice into squares and serve warm. Enjoy a healthy, protein-packed breakfast.
