Ingredients
  

For the Filling:

  • 500 g beef stew meat diced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots diced
  • 1 potato diced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 cup beef stock
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons flour
  • 2 tablespoons olive oil

For the Flaky Crust:

  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup cold butter cubed
  • 6 –8 tablespoons cold water
  • 1 egg beaten (for egg wash)

Instructions
 

Prepare the Beef

  • Heat olive oil in a pan. Add beef cubes. Brown them on all sides. Set aside.

Cook Onions and Garlic

  • In the same pan, add onion and garlic. Cook until soft and fragrant.

Add Carrots and Potato

  • Add diced carrots and potato. Stir for a few minutes until slightly softened.

Add Tomato Paste and Flour

  • Stir in tomato paste and flour. Cook for one minute to remove raw taste.

Pour in Stock

  • Add beef stock. Stir well to combine with vegetables and flour mixture.

Add Spices

  • Add thyme, salt and pepper. Stir gently to mix flavors.

Return Beef to Pan

  • Add browned beef back into pan. Mix everything and simmer for 15–20 minutes.

Add Peas

  • Add frozen peas. Stir and cook for 5 more minutes. Turn off heat.

Prepare Crust

  • In a bowl, mix flour and salt. Add cold butter. Rub until mixture resembles crumbs.

Add Cold Water

  • Gradually add cold water. Mix gently until dough forms. Do not overwork.

Roll Out Dough

  • Roll dough on floured surface. Make it large enough to cover pie dish.

Assemble Pie

  • Pour beef and veggie filling into pie dish. Cover with rolled dough.

Seal Edges

  • Trim excess dough. Press edges to seal. Cut small slits on top for steam.

Brush with Egg

  • Brush top with beaten egg for golden finish.

Bake Pie

  • Bake in preheated oven at 200°C (400°F) for 25–30 minutes.

Check Crust

  • Ensure crust is golden and flaky. Filling should be bubbling inside.

Rest Pie

  • Remove from oven. Let pie rest for 5–10 minutes before slicing.

Serve Warm

  • Cut slices and serve hot. Enjoy with gravy or salad if desired.
