Ingredients
  

  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 3 garlic cloves minced
  • 2 carrots sliced
  • 2 celery stalks sliced

  • 6 cups chicken or vegetable broth
  • 1 can diced tomatoes 400 g
  • 250 g cheese tortellini
  • 2 cups fresh spinach
  • ½ cup heavy cream
  • Salt to taste
  • Black pepper to taste
  • ¼ cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions
 

Heat the Olive Oil

  • Place a large soup pot over medium heat. Add olive oil and allow it to warm for about one minute.

Cook the Onion

  • Add chopped onion to the pot. Cook gently for three minutes until the onion becomes soft and slightly translucent.

Add Garlic

  • Stir in the minced garlic. Cook for about one minute while stirring constantly so the garlic does not burn.

Add Vegetables

  • Add sliced carrots and celery to the pot. Stir well and cook for about four minutes.

Add Seasonings

  • Sprinkle Italian seasoning, salt, and black pepper into the pot. Stir well to coat the vegetables evenly.

Pour the Broth

  • Add chicken or vegetable broth to the pot. Stir gently and bring the mixture to a gentle simmer.

Add Tomatoes

  • Pour the diced tomatoes with their juices into the soup. Mix well and allow the soup to simmer.

Cook the Tortellini

  • Add cheese tortellini directly into the soup. Cook according to package instructions, usually about five minutes.

Add Spinach

  • Stir fresh spinach into the soup. Cook for two minutes until the leaves soften and shrink.

Add Cream

  • Pour heavy cream into the soup. Stir gently to create a rich and creamy broth.

Taste and Adjust

  • Taste the soup and adjust salt or pepper if needed. Let the soup simmer for two more minutes.

Serve the Soup
