Ingredients
  

  • 1 tablespoon olive oil
  • 500 grams ground beef
  • 1 small onion chopped
  • 3 garlic cloves minced
  • 2 cups tomato sauce
  • 1 can crushed tomatoes 400 grams
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon chili flakes optional
  • Salt and black pepper to taste
  • 8 lasagna noodles broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • Fresh parsley or basil for garnish
  • Use fresh herbs if possible. They add extra flavor.

Instructions
 

Cook the Beef

  • Heat olive oil in a large pot. Add ground beef. Cook until brown. Break it into small pieces while cooking.

Add Onion and Garlic

  • Add chopped onion to the pot. Cook until soft and clear. Stir in garlic and cook for one minute.

Add Tomatoes

  • Pour in tomato sauce and crushed tomatoes. Stir well. Let it cook for five minutes to build flavor.

Add Broth and Seasoning

  • Add beef broth, oregano, basil, chili flakes, salt, and pepper. Stir everything together gently.

Simmer the Soup

  • Bring soup to a gentle boil. Reduce heat. Let it simmer for ten minutes so flavors blend nicely.

Add Noodles

  • Add broken lasagna noodles into the soup. Cook for 10 to 12 minutes until noodles are tender.

Prepare Cheese Mixture

  • In a small bowl, mix ricotta, half mozzarella and half parmesan. Stir until smooth and creamy.

Add Final Cheese

  • Turn off heat. Stir some mozzarella and parmesan into the soup. This makes it extra cheesy.

Serve and Garnish

  • Ladle soup into bowls. Add a spoon of cheese mixture on top. Sprinkle fresh parsley or basil before serving.
