Ingredients

  • 1 medium onion diced
  • 2 celery stalks diced
  • 2 medium carrots diced
  • 3 garlic cloves minced
  • 3 medium Yukon Gold potatoes diced
  • 4 cups seafood stock or chicken broth
  • 2 cups fresh or frozen corn kernels

  • 1 pound cooked lobster meat chopped
  • 1 teaspoon fresh thyme leaves
  • 1 bay leaf
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions
 

Cook The Vegetables

  • Heat the butter and olive oil in a large pot. Cook the onion, celery and carrots until soft and fragrant.

Add The Garlic

  • Stir in the minced garlic and cook for one minute while stirring constantly.

Add The Potatoes

  • Mix the diced potatoes into the vegetables until evenly coated with butter.

Pour In The Stock

  • Add the seafood stock and bay leaf. Stir everything together until well combined.

Simmer

  • Bring the soup to a gentle boil. Reduce the heat and simmer for about twenty minutes until the potatoes become tender.

Add The Corn

  • Stir in the corn kernels and cook for another five minutes until tender.

Pour In The Cream

  • Slowly stir in the heavy cream over low heat until the chowder becomes smooth and creamy.

Add The Lobster

  • Gently fold the chopped lobster into the chowder and warm it for three to four minutes without boiling.

Season The Chowder

Remove The Bay Leaf
