Ingredients

  • 2 tablespoons olive oil
  • 2 medium Yukon Gold potatoes thinly sliced
  • 1 small onion thinly sliced
  • 8 large eggs
  • ¼ cup whole milk
  • 1 cup shredded mozzarella or Gruyère cheese
  • ½ cup grated Parmesan cheese
  • ½ cup chopped fresh basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional

Optional Additions

  • Cherry tomatoes
  • Spinach
  • Asparagus
  • Cooked bacon
  • Smoked salmon
  • Goat cheese

Instructions

Preheat The Oven

  • Preheat the oven to 375°F so it is ready for finishing the frittata.

Cook The Potatoes

  • Heat the olive oil in an oven-safe skillet. Cook the sliced potatoes for about eight minutes until almost tender.

Add The Onion

  • Stir in the sliced onion and cook for about four minutes until soft and lightly golden.

Prepare The Egg Mixture

  • Whisk together the eggs, milk, salt, black pepper and red pepper flakes until fully combined.

Add The Cheese

  • Stir the mozzarella and Parmesan into the egg mixture until evenly distributed.

Add Fresh Basil

  • Fold the chopped basil into the egg mixture for fresh herb flavor throughout the frittata.

Combine Everything

  • Pour the egg mixture evenly over the cooked potatoes and onions in the skillet.

Cook On The Stove

  • Cook over medium-low heat for about three minutes until the edges begin to set.

Transfer To The Oven

  • Place the skillet in the preheated oven and bake for about twelve to fifteen minutes until the center is set.

Check For Doneness

  • The frittata should be puffed, lightly golden and no longer jiggly in the center.

Cool Slightly

  • Let the frittata rest for about five minutes before slicing.

Serve And Enjoy

  • Garnish with extra basil and Parmesan cheese, then serve warm or at room temperature.

Notes

  • Use Yukon Gold potatoes for a creamy texture.
  • Slice the potatoes thinly for even cooking.
  • Fresh basil provides the best flavor.
  • Do not overbake the frittata.
  • Add cherry tomatoes for extra freshness.
  • Substitute Gruyère for a richer flavor.
  • Serve warm or at room temperature.
