Ingredients

  • 1 pound ground beef
  • 1 medium onion finely chopped
  • 3 garlic cloves minced
  • 1 tablespoon olive oil
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 can kidney beans drained and rinsed
  • 1 can black beans drained and rinsed
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup beef broth
  • 1 teaspoon dried oregano
  • Optional toppings: cheese sour cream, green onions

Instructions

Sauté the Beef

  • Turn the Instant Pot to sauté mode. Add olive oil, then ground beef. Cook until browned, breaking it apart evenly.

Add Onion and Garlic

  • Add chopped onion and garlic to the beef. Cook for two minutes until fragrant and slightly soft.

Deglaze the Pot

  • Pour in beef broth. Scrape the bottom well to remove stuck bits and prevent burning.

Add Tomatoes and Beans

  • Add diced tomatoes, tomato sauce, kidney beans, and black beans. Stir gently to combine evenly.

Season the Chili

  • Add chili powder, cumin, paprika, oregano, salt, and black pepper. Mix well so flavors distribute evenly.

Pressure Cook

  • Close the lid and set valve to sealing. Cook on high pressure for 15 minutes.

Natural Release

  • Let pressure release naturally for 10 minutes. Carefully switch valve to venting.

Stir and Adjust

  • Open lid and stir the chili. Taste and adjust seasoning if needed.

Thicken if Needed

  • Use sauté mode for five minutes if you want thicker chili consistency.

Serve Hot

  • Turn off the Instant Pot. Serve the chili hot with your favorite toppings.

Notes

  • Use lean ground beef to reduce excess grease.
  • Add bell peppers for extra texture and sweetness.
  • Use ground turkey as a lighter alternative.
  • Add a pinch of sugar if tomatoes taste too acidic.
  • For spicy chili, add cayenne pepper or diced jalapeños.
  • Make it smoky by adding smoked paprika.
  • Add corn for a slightly sweet flavor.
