Ingredients
  

  • 2 cups granulated sugar
  • 1/2 cup heavy cream
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups pecan halves
  • Pinch of salt

Instructions
 

Prepare the Baking Sheet

  • Line a baking sheet with parchment paper. Set aside near stove for quick use.

Combine Ingredients

  • In a heavy saucepan, add sugar, cream, butter and salt. Stir gently to combine.

Cook the Mixture

  • Place pan over medium heat. Stir constantly until sugar dissolves completely.

Attach Thermometer

  • Attach candy thermometer to side of pan. Make sure tip does not touch bottom.

Reach Soft-Ball Stage

  • Cook mixture until it reaches 235°F–240°F (soft-ball stage). Remove from heat immediately.

Stir in Vanilla and Pecans

  • Add vanilla extract and pecans. Stir gently but thoroughly to combine.

Beat for Creaminess

  • Beat mixture with wooden spoon for 2–3 minutes. It will thicken and become creamy.

Drop onto Sheet

  • Use spoon to drop small mounds onto prepared baking sheet. Shape lightly if needed.

Let Cool

  • Allow pralines to cool at room temperature for 1–2 hours until firm.

Serve and Enjoy
