Ingredients

  • 4 cups chicken or vegetable broth
  • 1/2 cup pastina small pasta stars
  • 1 tablespoon unsalted butter
  • 1/4 cup grated Parmesan cheese
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 teaspoon chopped fresh parsley optional
  • 1 small garlic clove minced (optional for extra flavor)

Instructions

Heat the Broth

  • Pour broth into a medium saucepan. Place over medium heat. Bring to a gentle simmer.

Add Butter and Garlic

  • Stir in butter and minced garlic if using. Let it melt and release a mild, soothing aroma.

Cook the Pastina

  • Add pastina to the simmering broth. Stir occasionally to prevent sticking. Cook until tender, about 5–7 minutes.

Season the Soup

  • Add salt and pepper to taste. Remember, Parmesan will also add a salty flavor, so taste before adding more.

Add Parmesan Cheese

  • Stir in grated Parmesan cheese. It melts into the broth, creating a smooth and rich texture.

Finish with Herbs

  • Sprinkle fresh parsley over the soup. Stir gently. Remove from heat. Serve immediately while warm.

Notes

  • Use homemade chicken broth for the richest flavor.
  • For a vegetarian version, use vegetable broth and skip the cheese or use vegan Parmesan.
  • Add finely chopped carrots or celery for extra nutrients.
  • Stir in a small splash of lemon juice to brighten flavors.
  • Serve with a slice of warm, crusty bread for a complete meal.
