Ingredients

  • 1 pound ground pork
  • 1 egg
  • 1/3 cup breadcrumbs
  • 2 tablespoons milk or water
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 2 green onions finely chopped
  • 2 tablespoons vegetable oil
  • Optional sauce: hoisin sauce or sweet chili sauce

Instructions

Soak the breadcrumbs

  • Place breadcrumbs in a small bowl. Add milk or water. Let them soak until soft and spongy.

Prepare the pork mixture

  • Add ground pork to a large bowl. Add soaked breadcrumbs, egg, garlic, ginger, and green onions.

Season the meat

  • Add soy sauce, oyster sauce, sesame oil, sugar, and black pepper. Mix gently until just combined.

Shape the meatballs

  • Use clean hands to roll the mixture into medium-sized balls. Do not press too hard.

Heat the pan

  • Heat vegetable oil in a large skillet over medium heat until hot but not smoking.

Cook the meatballs

  • Place meatballs in the pan. Cook and turn slowly until all sides are golden brown.

Finish cooking

  • Lower heat and cover the pan. Cook for ten minutes until meatballs are fully cooked inside.

Optional sauce glaze

  • Brush meatballs with hoisin or sweet chili sauce. Cook one more minute for extra shine and flavor.

Rest before serving

  • Remove meatballs from heat. Let them rest for five minutes to keep juices inside.

Notes

  • Use pork with some fat for the juiciest texture.
  • Do not overmix the meat to avoid tough meatballs.
  • Add finely chopped water chestnuts for crunch.
  • Steam meatballs instead of frying for a lighter version.
  • Add chili oil or chili paste for spicy meatballs.
  • Use ground chicken or turkey if pork is unavailable.
