Ingredients

  • 1.5 kg turkey breast bone-in or boneless
  • 4 tablespoons unsalted butter softened
  • 1 tablespoon olive oil
  • 5 garlic cloves minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon paprika
  • 1 lemon sliced
  • 1 onion sliced
  • ½ cup chicken broth

Instructions

Preheat the Oven

  • Preheat your oven to 180°C. This temperature cooks turkey evenly without drying the meat.

Prepare the Herb Butter

  • Mix butter, garlic, salt, pepper, herbs, paprika, and olive oil until smooth and well combined.

Prepare the Turkey

  • Pat the turkey breast dry using paper towels. Dry skin helps create better color while roasting.

Season the Turkey

  • Rub herb butter all over turkey. Gently push some butter under the skin.

Prepare the Pan

  • Place onion slices in roasting pan. Add lemon slices on top for flavor and moisture.

Place Turkey in Pan

  • Set turkey breast over onions. Pour chicken broth into pan carefully.

Cover and Roast

  • Cover loosely with foil. Roast for 40 minutes to keep moisture inside the meat.

Uncover for Browning

  • Remove foil. Roast another 30 minutes until skin turns golden brown.

Check Temperature

  • Insert thermometer into thickest part. It should read 165°F or 74°C.

Rest the Turkey

  • Remove turkey from oven. Cover lightly with foil. Rest for 10 minutes before slicing.

Notes

  • Use fresh herbs for stronger flavor.
  • Add honey to butter for mild sweetness.
  • Try garlic powder if fresh garlic is unavailable.
  • Add carrots and potatoes to pan for one-pan meal.
  • Use smoked paprika for deeper taste.
  • Always rest turkey before slicing.
