Ingredients
  

  • 2 lbs 900 g boneless, skinless chicken breasts or thighs
  • 1/2 cup fresh lime juice about 2–3 limes
  • Zest of 2 limes
  • 1/4 cup fresh cilantro chopped
  • 3 garlic cloves minced
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp chili powder optional for heat
  • Salt and black pepper to taste
  • 1/4 cup chicken broth or water

Instructions
 

Prepare Chicken

  • Trim excess fat from chicken and pat dry with paper towels.

Mix Marinade

  • In a small bowl, combine lime juice, lime zest, chopped cilantro, minced garlic, cumin, paprika, chili powder, salt and black pepper.

Add Chicken to Slow Cooker

  • Place chicken in the slow cooker. Pour marinade over chicken, ensuring it’s evenly coated.

Add Broth

  • Pour chicken broth or water into the slow cooker to keep chicken moist during cooking.

Cook on Low

  • Cover and cook on low for 4 hours (or high for 2–3 hours) until chicken is tender and fully cooked.

Shred or Slice Chicken

  • Remove chicken from the slow cooker. Shred with two forks or slice as desired.

Mix with Juices

  • Return shredded or sliced chicken to the slow cooker. Toss in the juices for extra flavor and moisture.

Serve Hot

  • Serve chicken over rice, in tacos, salads, or sandwiches. Garnish with extra cilantro and lime wedges.
