Ingredients
  

  • 1 pound ground beef
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 2 cups milk
  • 1 cup heavy cream
  • 2 cups elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon mustard powder
  • ½ cup diced tomatoes optional
  • 2 tablespoons chopped parsley for garnish

Instructions
 

Cook the Ground Beef

  • Heat a large soup pot over medium heat. Add ground beef. Cook while breaking it apart. Continue cooking until browned and fully cooked.

Add Onion and Garlic

  • Add chopped onion and minced garlic to the beef. Stir well. Cook for three minutes until onions become soft and fragrant.

Season the Beef

  • Add salt, black pepper, paprika and mustard powder. Stir well to coat the meat evenly. Let the spices cook for one minute.

Prepare the Soup Base

  • Pour beef broth into the pot. Stir slowly while scraping the bottom of the pot. This adds extra flavor to the soup.

Add Milk and Cream

  • Pour milk and heavy cream into the soup. Stir gently until the mixture becomes smooth and well combined.

Add the Pasta

  • Add elbow macaroni directly into the soup. Stir well so the pasta spreads evenly in the liquid.

Simmer the Soup

  • Bring the soup to a gentle boil. Reduce heat to low. Simmer for ten minutes until pasta becomes tender.

Make the Cheese Thickener

  • In a small pan melt butter over medium heat. Add flour. Stir constantly for one minute until a smooth paste forms.

Combine the Thickener

  • Add the butter and flour mixture into the soup. Stir slowly until the soup thickens and becomes creamy.

Add the Cheese

  • Add shredded cheddar cheese slowly. Stir continuously until the cheese melts completely into the soup.

Add Tomatoes (Optional)

  • If you like extra flavor, stir in diced tomatoes. Cook for two more minutes so the flavors blend well.

Final Taste Test

  • Taste the soup and adjust salt or pepper if needed. Let the soup cook for two more minutes.

Garnish and Serve

  • Turn off heat. Sprinkle chopped parsley on top. Serve hot in bowls for a warm and comforting meal.
