Ingredients
  

For the Crepes

  • 1 cup all-purpose flour
  • 2 eggs
  • cups milk
  • 1 tablespoon sugar
  • 1 tablespoon melted butter
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the Filling

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 2 ripe mangoes peeled and sliced

For Garnish

  • Powdered sugar
  • Extra mango slices
  • Mint leaves optional

Instructions
 

Prepare the Crepe Batter

  • In a bowl combine flour, eggs, milk, sugar, melted butter, vanilla and salt. Whisk until smooth and lump-free.

Rest the Batter

  • Let the batter rest for ten minutes. This step helps the flour absorb liquid and creates softer crepes.

Heat the Pan

  • Place a non-stick pan over medium heat. Lightly grease the surface with butter or cooking spray.

Cook the Crepes

  • Pour a small amount of batter into the pan. Tilt the pan to spread batter thinly across the surface.

Flip the Crepe

  • Cook for about one minute until edges lift slightly. Flip gently and cook the other side for thirty seconds.

Cool the Crepes

  • Place cooked crepes on a plate. Continue cooking remaining batter. Let all crepes cool completely before assembling.

Prepare the Cream Filling

  • In a bowl whip heavy cream, powdered sugar and vanilla extract. Beat until soft peaks form and cream becomes fluffy.

Slice the Mango

  • Peel ripe mangoes and cut them into thin slices. Make sure slices are even and not too thick.

Assemble the Crepe Roll

  • Lay one crepe flat on a clean surface. Spread whipped cream evenly across the center area.

Add Mango Slices

  • Place mango slices in a straight line across the cream filling. Keep them close together for a full roll.

Roll the Crepe

  • Fold the sides slightly inward. Roll the crepe gently from one end to the other to create a neat roll.

Chill the Rolls

  • Place the finished crepe rolls in the refrigerator for fifteen minutes so they firm up and hold shape.

Garnish and Serve

  • Dust powdered sugar on top. Garnish with mango slices and mint leaves. Serve immediately for best flavor.
