Ingredients

  • 2 chicken breasts sliced
  • 2 cups pasta penne or rigatoni works best
  • 1 cup heavy cream
  • 1 cup chicken broth
  • ½ cup grated parmesan cheese
  • ½ cup chopped sun-dried tomatoes
  • 3 garlic cloves minced
  • 1 teaspoon chili flakes
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil for garnish

Instructions

Cook the Pasta

  • Boil pasta in salted water until soft. Keep one cup of pasta water aside before draining completely.

Season the Chicken

  • Sprinkle salt, pepper, and Italian seasoning on the chicken. Mix well until all pieces are coated evenly.

Heat Oil in the Pan

  • Place a skillet on medium heat. Add olive oil and let it become hot before adding chicken pieces.

Cook the Chicken

  • Cook chicken for five minutes. Flip the pieces until they are golden and cooked through completely.

Add Garlic to the Pan

  • Lower heat slightly. Add minced garlic and sauté until fragrant without burning the garlic.

Add Sun-Dried Tomatoes

  • Mix in the chopped sun-dried tomatoes. Stir them for one minute to release their flavor.

Pour in the Chicken Broth

  • Add chicken broth to the pan. Stir gently and let it simmer for two minutes.

Add the Heavy Cream

  • Pour heavy cream into the pan. Mix well until the sauce becomes smooth and creamy.

Add Parmesan Cheese

  • Add grated parmesan cheese. Stir slowly until the cheese melts and the sauce thickens nicely.

Add Chili Flakes

  • Sprinkle chili flakes. Adjust the amount based on how spicy you want the sauce to taste.

Add the Cooked Pasta

  • Add cooked pasta to the creamy sauce. Mix until all pasta pieces are coated fully.

Add Reserved Pasta Water

  • Add a little pasta water if the sauce seems too thick. Mix until you get the perfect texture.

Cook for a Few Minutes

  • Let everything simmer for two to three minutes. This helps the flavors blend together perfectly.

Add Fresh Basil

  • Turn off heat. Add chopped basil on top. This adds freshness and a beautiful aroma.

Serve Warm

  • Serve immediately. Add extra parmesan cheese or basil for more flavor.

Notes

  • Slice chicken evenly: Thin pieces cook faster and stay tender.
  • Use sun-dried tomatoes in oil: They bring richer flavor and better texture.
  • Add spinach: Stir in fresh spinach at the end for a healthy twist.
  • Make it spicier: Add more chili flakes or a dash of paprika.
  • Use different pasta: Penne, rigatoni, bow-tie, or fettuccine all work great.
  • Thicken the sauce: Add more parmesan if you want a thicker, cheesier texture.
  • Make it lighter: Use half cream and half milk for a lighter version.
  • Extra protein option: Add cooked shrimp or bacon for more richness.
