Ingredients

  • 2 cans chickpeas drained
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 4 garlic cloves minced
  • ½ cup chopped sun-dried tomatoes
  • ½ cup vegetable broth
  • 1 teaspoon paprika
  • 1 teaspoon chili flakes
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated parmesan
  • Fresh basil for topping

Instructions

Sauté the onions

  • Heat olive oil in a pan. Add chopped onions and cook until soft and golden. Stir often for even cooking.

Add the garlic

  • Add minced garlic to the pan. Cook for one minute until fragrant and lightly golden.

Add the sun-dried tomatoes

  • Stir in the sun-dried tomatoes. Let them warm so they release flavor into the oil.

Add the spices

  • Add paprika, chili flakes, salt, pepper, and Italian seasoning. Mix well to coat everything with spice.

Pour in the broth

  • Add vegetable broth to the pan. Stir gently and let it simmer for two minutes to blend flavors.

Add the heavy cream

  • Pour heavy cream into the mixture. Stir slowly until the sauce becomes smooth and creamy.

Add the chickpeas

  • Add the drained chickpeas. Mix gently until all chickpeas are coated with creamy sauce.

Add the parmesan

  • Add grated parmesan and stir well. Let it melt fully into the sauce for a rich flavor.

Simmer the dish

  • Let everything cook for five minutes. This helps the sauce thicken and flavors blend well.

Garnish and serve

  • Turn off heat. Add fresh basil on top. Serve warm with bread, rice, or pasta.

Notes

  • Use coconut milk instead of heavy cream for a dairy-free version.
  • Add spinach for extra color and nutrition.
  • Use fresh tomatoes if you do not have sun-dried tomatoes.
  • Add more chili flakes if you enjoy spicy food.
  • Serve the dish with pasta for a creamy, rich meal.
  • Add roasted veggies for extra flavor and texture.
  • For a thicker sauce, simmer longer until it reaches your perfect texture.
