Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 1 small carrot finely diced
  • 1/2 cup frozen peas
  • 2 tablespoons tomato paste
  • 1/2 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 2 refrigerated pie crusts
  • 1 egg
  • 1 tablespoon water

Instructions

Preheat the Oven

  • Preheat your oven to 375°F. Grease a 12-cup muffin tin with cooking spray or butter.

Cook the Onion

  • Heat olive oil in a skillet. Add chopped onion and cook until soft and slightly golden.

Add Garlic and Carrots

  • Stir in garlic and diced carrots. Cook for two minutes until fragrant and slightly tender.

Brown the Meat

  • Add ground beef to the skillet. Cook until browned. Break it apart with a spoon.

Add Seasoning

  • Mix in salt, pepper, paprika, thyme and Worcestershire sauce. Stir well for even flavor.

Add Tomato Paste

  • Add tomato paste and beef broth. Stir everything together until the mixture becomes thick.

Add Peas

  • Mix in frozen peas. Cook for two more minutes. Remove from heat and cool slightly.

Prepare the Pie Dough

  • Roll out pie crusts on a lightly floured surface. Cut circles large enough for muffin cups.

Line the Muffin Tin

  • Press each dough circle into muffin cups. Make sure the dough reaches the sides.

Fill the Cups

  • Spoon the meat mixture into each pie crust. Do not overfill the cups.

Add Top Crust

  • Cut smaller dough circles for pie tops. Place them over each pie and seal edges.

Brush with Egg Wash

  • Whisk egg with water. Brush the tops for a golden baked finish.

Bake the Pies

  • Bake for 25 to 30 minutes until the crust turns golden brown and crispy.

Cool and Serve

  • Let the pies cool for 10 minutes before removing them from the muffin tin.

Notes

  • Use ground chicken or turkey instead of beef.
  • Add shredded cheese for extra richness.
  • Use puff pastry for a lighter texture.
  • Add mushrooms for more flavor.
  • Make them spicy with chili flakes.
  • Let filling cool before adding to crust.
  • Use leftover roast meat for a budget-friendly version.
  • Add mashed potatoes on top for shepherd’s pie style.
