Ingredients
  

  • 2 cups cooked shredded chicken
  • 1 tablespoon olive oil or sesame oil
  • 1 cup sliced mushrooms
  • 1 tablespoon fresh ginger grated
  • 3 cloves garlic minced
  • 6 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 carrot thinly sliced
  • 2 green onions chopped
  • 1 tablespoon fresh cilantro for garnish

Instructions
 

Heat the Oil

  • Place a large soup pot over medium heat. Add olive oil or sesame oil and let it warm for about one minute.

Cook the Garlic and Ginger

  • Add minced garlic and grated ginger to the pot. Stir for one minute until fragrant.

Add Mushrooms

  • Add sliced mushrooms to the pot. Cook for about five minutes until they soften and release their juices.

Add Carrots

  • Stir in the sliced carrots. Cook for two minutes to slightly soften them.

Pour the Broth

  • Add chicken broth into the pot. Stir gently to combine the ingredients.

Season the Soup

  • Add soy sauce, salt and black pepper. Mix well so the flavors blend evenly.

Add Chicken

  • Add the shredded chicken into the broth. Stir gently to distribute it through the soup.

Simmer the Soup

  • Bring the soup to a gentle boil. Reduce heat and simmer for 20 minutes so the flavors develop.

Taste and Adjust

  • Taste the soup and adjust seasoning if needed. Add more salt or pepper to your preference.

Add Green Onions

  • Stir in chopped green onions during the last minute of cooking for fresh flavor.

Garnish and Serve

  • Pour the hot soup into bowls. Garnish with fresh cilantro and serve immediately.
