Ingredients
  

  • 8 mutton chops
  • 2 tablespoons oil or ghee
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 tablespoon ginger-garlic paste
  • 1/2 cup yogurt
  • 1 teaspoon lemon juice
  • Fresh coriander for garnish

Instructions
 

Clean the Chops

  • Wash the mutton chops in cold water. Pat them dry with a paper towel.

Prepare the Marinade

  • Mix yogurt, ginger-garlic paste, salt, spices, and lemon juice in a bowl.

Marinate the Chops

  • Rub the marinade on the chops. Cover and keep in the fridge for 1–2 hours or overnight.

Heat the Pan

  • Add oil or ghee to a pan. Heat on medium until warm.

Cook the Chops

  • Put the marinated chops in the pan. Cook 8–10 minutes on each side.

Check if Cooked

  • Pierce the meat with a fork. Juice should be clear and meat should be soft.

Rest the Chops

  • Take the chops out. Cover with foil for 5 minutes.

Garnish and Serve

  • Sprinkle fresh coriander. Serve hot with rice, bread, or salad.

Notes

  • Add a little soy sauce or vinegar for extra flavor.
  • Use mustard seeds or rosemary for a different aroma.
  • Grill instead of frying for smoky taste.
  • Don’t overcook; meat becomes hard.
  • Marinate overnight for very soft chops.
