For The Soup

  • 1 pound beef stew meat cut into cubes
  • 2 tablespoons oil
  • 1 medium onion chopped
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 3 potatoes diced
  • 2 cups cabbage chopped
  • 3 garlic cloves minced
  • 6 cups beef broth
  • 1 can diced tomatoes
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 1 tablespoon tomato paste

Optional Garnish

  • Sour cream
  • Fresh parsley
  • Crusty bread

Instructions
 

Brown the Beef

  • Heat oil in a large pot. Add beef cubes and cook until brown on all sides.

Cook The Onion

  • Add chopped onion into the pot. Cook until soft and slightly golden.

Add Carrots And Celery

  • Add sliced carrots and celery. Stir everything together for two minutes.

Add Garlic

  • Mix minced garlic into the vegetables. Cook for thirty seconds until fragrant.

Add Tomato Paste

  • Stir tomato paste into the mixture. Cook briefly to develop richer flavor.

Add Liquids

  • Pour beef broth and diced tomatoes into the pot. Stir well.

Add Seasonings

  • Add salt, pepper, paprika, parsley and bay leaf. Mix everything together.

Add Potatoes

  • Put diced potatoes into the soup and stir carefully.

Simmer The Soup

  • Cover the pot and simmer gently for forty minutes.

Add Cabbage

  • Add chopped cabbage and cook for another fifteen minutes.

Check Seasoning

  • Taste the soup and adjust salt or pepper if needed.

Serve Hot

  • Remove bay leaf and serve hot with parsley or sour cream.
