Ingredients
  

  • 1 medium zucchini sliced
  • 1 medium yellow squash sliced
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 small red onion sliced
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of 1 lemon
  • ¼ cup crumbled feta cheese
  • 2 tablespoons fresh parsley chopped

Instructions
 

Preheat Oven

  • Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.

Prepare Vegetables

  • Wash and slice zucchini, squash, bell peppers and red onion. Keep cherry tomatoes whole.

Toss Vegetables

  • In a large bowl, combine all vegetables. Drizzle with olive oil, lemon juice, oregano, garlic powder, salt and pepper. Toss to coat evenly.

Spread on Pan

  • Arrange vegetables in a single layer on prepared baking sheet. Avoid overcrowding for even roasting.

Roast Vegetables

  • Place pan in oven and roast for 20–25 minutes, stirring halfway, until vegetables are tender and slightly caramelized.

Add Feta

  • Remove pan from oven. Sprinkle crumbled feta cheese evenly over roasted vegetables.

Garnish

  • Sprinkle chopped fresh parsley on top. Stir gently or leave as garnish.

Serve

  • Transfer to serving dish. Serve hot as a side or main dish with bread, rice, or protein.
