- 4 boneless or skinless chicken breasts
- ½ cup honey mustard (store-bought or homemade)
- ½ tsp garlic powder
- ½ tsp paprika
- ½ tsp Salt
- ¼ tsp black pepper
- 8 slices bacon, cooked until crisp
- 1 cup shredded Monterey Jack cheese
- 1 cup hredded Cheddar cheese
- 2 tbsp olive oil
- 2 green onions, chopped (for garnish)
Substitutions & Tips:
- Use grilled chicken breast with low-fat cheese and turkey bacon
- Add a dash of cayenne or hot sauce to the marinade for heat.
- Top with sautéed mushrooms or onions for extra texture and flavor
- Cook chicken ahead and assemble with cheese and bacon when ready to serve — just reheat and melt!

Marinate the Chicken
In a bowl, mix honey mustard, garlic powder, paprika, salt and pepper.
Place chicken breasts in a resealable bag or dish and pour the marinade over them.
Let them marinate for at least 30 minutes (or overnight for maximum flavor).
Pro Tip: Don’t skip marinating — it’s the key to juicy, flavorful chicken!
Sear the Chicken
Heat in a skillet over medium high heat an amount of olive oil.
Take chicken out of marinade (reserve some to brush chicken with, later).
Turn over every side 4-5 minutes, until brown.
Important to note: The chicken will not have to cook all the way yet it will be completed in the oven.
Bake or Grill
Preheat your oven to 400°F (200°C).
Put chicken on a baking dish or ovenproof dish.
Brush reserved marinade.
Place layer 2 bacon over the chicken breasts.
Sprinkle the two cheeses evenly.
Bake between 10-12 minutes or until the cheese is bubston and the chicken is at 165 F.
