Ingredients
  

  • 8 chicken legs drumsticks
  • 3 tablespoons Sriracha sauce
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 3 garlic cloves minced
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon lemon juice

Instructions
 

Preheat the oven

  • Set your oven to 200°C (400°F). Line a baking tray with foil. Place a rack on top if available.

Prepare the marinade

  • In a bowl, mix Sriracha sauce, honey, soy sauce, olive oil, garlic, lemon juice and spices until well combined.

Coat the chicken

  • Pat chicken legs dry using paper towels. Coat each piece with marinade, making sure it covers all sides evenly.

Arrange on tray

  • Place the chicken legs on the rack or tray. Leave space between each piece for even cooking.

Bake the chicken

  • Put the tray in the oven. Bake for 25 minutes without turning to allow the skin to crisp up.

Flip and baste

  • Turn the chicken legs carefully. Brush with extra marinade. This adds more flavor and keeps them moist.

Bake again

  • Continue baking for another 20 minutes until fully cooked and slightly charred on edges.

Check doneness

  • Make sure chicken is cooked through. Juices should run clear. Internal temperature should be safe for eating.

Rest before serving

  • Remove from oven and let the chicken rest for five minutes. This keeps the meat juicy and tender.
