Ingredients

  • ¼ cup red wine vinegar
  • 2 tablespoons finely minced shallots
  • ½ teaspoon freshly cracked black pepper
  • ¼ teaspoon salt
  • 1 teaspoon finely chopped fresh parsley optional

Instructions

Mince the Shallots

  • Peel shallots and finely mince them. Small pieces release more flavor into the sauce.

Combine Vinegar and Shallots

  • In a small bowl, add red wine vinegar. Stir in minced shallots.

Add Salt and Pepper

  • Add salt and freshly cracked black pepper. Mix gently until combined.

Optional Parsley

  • Add finely chopped parsley for color and mild freshness. Stir lightly.

Chill the Sauce

  • Refrigerate the sauce for 10–15 minutes before serving. This lets flavors blend.
  • Serve with Oysters
  • Spoon small amount over freshly shucked oysters. Serve immediately for best taste.

Notes

  • Use white wine vinegar if you prefer milder acidity.
  • Add a small pinch of sugar to balance tartness.
  • Use shallots only; avoid onions as they are too strong.
  • Make sauce ahead of time for deeper flavor.
  • Add a few drops of lemon juice for extra brightness.
  • Do not store for more than 24 hours; fresh vinegar flavor is best.
