Ingredients
  

  • 4 pounds beef brisket
  • 2 tablespoons olive oil
  • 2 large onions sliced
  • 4 garlic cloves minced
  • 2 cups beef broth
  • 1 cup tomato sauce
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 3 carrots chopped
  • 2 celery stalks chopped

Instructions
 

Prepare the Brisket

  • Pat the brisket dry with paper towels. Season both sides with salt, pepper and smoked paprika evenly.

Heat the Oil

  • Place a large Dutch oven over medium-high heat. Add olive oil and let it become hot before cooking.

Sear the Meat

  • Place brisket inside the pot carefully. Cook each side until brown and flavorful, about five minutes per side.

Remove the Brisket

  • Transfer the browned brisket onto a plate. Keep the flavorful juices inside the Dutch oven for later cooking.

Cook the Vegetables

  • Add onions, carrots and celery into the pot. Stir and cook until vegetables become soft and lightly golden.

Add Garlic

  • Stir minced garlic into the vegetables. Cook for one minute until fragrant but not burned or too dark.

Make the Sauce

  • Pour beef broth, tomato sauce, Worcestershire sauce and brown sugar into the pot. Stir until everything combines smoothly.

Add Seasonings

  • Mix thyme and bay leaves into the sauce. Taste carefully and adjust salt if needed before braising.

Return the Brisket

  • Place the brisket back into the Dutch oven. Spoon some sauce over the top to keep it moist.

Cover and Bake

  • Cover the pot tightly with a lid. Bake at 325°F for about four hours until meat becomes fork tender.

Rest the Meat

  • Remove brisket from the oven carefully. Let it rest fifteen minutes before slicing for juicy and tender results.

Slice and Serve
