Ingredients

  • 4 cups yellow squash sliced
  • 1 small onion chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 egg beaten
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup crushed buttery crackers
  • 2 tablespoons butter melted

Instructions

Preheat the Oven

  • Preheat your oven to 350°F. Lightly grease a baking dish to prevent sticking.

Cook Squash

  • In a skillet, cook sliced squash and onion over medium heat until soft. Stir often to avoid burning.

Drain Excess Water

  • Remove squash mixture and drain any extra liquid. This keeps the casserole from becoming watery.

Mix Ingredients

  • In a bowl, combine squash mixture, cheese, sour cream, mayonnaise, egg, salt and pepper.

Transfer to Dish

  • Pour the mixture into the prepared baking dish. Spread evenly for even baking.

Prepare Topping

  • Mix crushed crackers with melted butter. Stir until coated well.

Add Topping

  • Sprinkle the cracker mixture evenly over the casserole for a crispy topping.

Bake the Casserole

  • Bake for 30–35 minutes until the top is golden brown and the casserole is set.

Cool Slightly

  • Let the casserole rest for 10 minutes before serving. This helps it firm up.

Serve Warm

  • Serve warm as a side dish with your favorite meals.

Notes

  • Use fresh squash for best flavor
  • Add garlic for extra taste
  • Try mozzarella or Monterey Jack cheese
  • Add cooked bacon for richness
  • Use gluten-free crackers if needed
  • Do not skip draining squash to avoid soggy casserole
