  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cold water or cold sparkling water
  • Oil for deep frying

Instructions
 

Prepare dry mix

  • In a bowl, mix flour, cornstarch, baking powder, salt and pepper.

Add cold liquid

  • Slowly add cold water while whisking to form a smooth batter.

Check consistency

  • Batter should be slightly thick but still pourable.

Heat oil

  • Heat oil in a deep pan to medium-high temperature.

Dip food

  • Dip chicken, fish or vegetables into batter and coat evenly.

Fry immediately

  • Place coated food into hot oil carefully.

Cook until golden

  • Fry until crispy and golden brown on all sides.

Drain oil

  • Remove and place on paper towels to remove extra oil.
