Ingredients

  • 1/2 cup oats or almond flour
  • 1 small onion finely chopped
  • 1/2 cup unsweetened almond milk or low-fat milk
  • 1 egg
  • 2 tablespoons sugar-free ketchup
  • 1 tablespoon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

For the glaze:

  • 1/3 cup sugar-free ketchup
  • 1 tablespoon mustard
  • 1 tablespoon apple cider vinegar

Instructions
 

Preheat the oven

  • Preheat your oven to 180°C. This helps cook the meatloaf evenly and gives it a nice texture.

Prepare the mixture

  • In a large bowl, combine ground meat, oats, onion, milk, egg, ketchup, mustard and all seasonings.

Mix gently

  • Mix everything using your hands or spoon. Do not overmix. Stop when ingredients are just combined and evenly mixed.

Shape the meatloaf

  • Transfer the mixture to a baking dish. Shape it into a loaf. Make sure the shape is even for proper cooking.

Make the glaze

  • In a small bowl, mix sugar-free ketchup, mustard and vinegar. Stir until smooth and well blended.

Add glaze on top

Bake the meatloaf
