Ingredients

  • 1 bag frozen hash brown potatoes 30 ounces
  • 4 cups chicken broth
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 2 cups milk
  • 1 cup heavy cream
  • 8 ounces cream cheese softened
  • 2 cups cheddar cheese shredded
  • 4 slices bacon cooked and crumbled
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Chopped green onions for garnish

Instructions

Melt the Butter

  • Place a large soup pot over medium heat. Add butter and let it melt completely before adding vegetables.

Cook the Onion

  • Add chopped onion into the pot. Stir often until onions become soft, translucent and lightly golden in color.

Add Garlic

  • Mix minced garlic into the onions carefully. Cook for one minute until fragrant but not browned or burned.

Add the Hash Browns

  • Pour frozen hash browns into the pot. Stir gently to combine with onions and garlic evenly.

Pour the Broth

  • Add chicken broth slowly into the pot. Stir everything together and bring the mixture to a gentle boil.

Simmer the Soup

  • Reduce heat to low and simmer for fifteen minutes. The potatoes will soften and absorb delicious flavor beautifully.

Add the Milk

  • Pour milk and heavy cream into the soup carefully. Stir slowly to keep the texture smooth and creamy.

Mix in Cream Cheese

  • Add softened cream cheese into the soup. Stir continuously until the cheese melts fully and becomes smooth.

Add Cheddar Cheese

  • Sprinkle shredded cheddar cheese into the soup gradually. Stir until the cheese melts completely into the creamy broth.

Season the Soup

  • Add salt, black pepper and paprika into the soup. Stir well and taste carefully before serving warm.

Add Bacon

  • Mix most crumbled bacon into the soup. Save some bacon pieces for topping each bowl before serving.

Garnish and Serve

  • Ladle soup into bowls carefully. Top with bacon, green onions and extra cheese before serving hot.

Notes

  • Use sharp cheddar for stronger flavor.
  • Stir often to prevent cheese sticking.
  • Add cooked sausage for extra protein.
  • Use vegetable broth for different flavor.
  • Blend part of the soup for smoother texture.
  • Add jalapeƱos for spicy soup.
  • Fresh herbs make great garnish.
  • Use turkey bacon for lighter soup.
  • Do not boil after adding dairy.
  • Add corn for sweeter flavor.
