Ingredients
  

For the Lemon Blossoms

  • 1 box yellow cake mix
  • 1 small box lemon gelatin mix
  • 4 large eggs
  • 3/4 cup vegetable oil
  • 1 package cream cheese softened

For the Lemon Glaze

  • 4 cups powdered sugar
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 3 tablespoons vegetable oil
  • 3 tablespoons water

Instructions
 

Prepare the Oven

  • Preheat your oven to 350 degrees Fahrenheit. Grease the mini muffin pan lightly to prevent the cakes from sticking.

Mix the Batter

  • Add cake mix, lemon gelatin, eggs, oil and cream cheese into a bowl. Beat until smooth and creamy.

Fill the Muffin Pan

  • Spoon batter into mini muffin cups carefully. Fill each cup about three-quarters full for best baking results.

Bake the Lemon Blossoms

  • Place the pan into the oven. Bake for about twelve minutes until the tops look light golden and set.

Cool Slightly

  • Remove the cakes from the oven carefully. Let them cool in the pan for five minutes before removing gently.

Prepare the Lemon Glaze

  • Whisk powdered sugar, lemon juice, lemon zest, oil and water together. Mix until the glaze becomes smooth and shiny.

Glaze the Blossoms

  • Dip warm lemon blossoms into the glaze completely. Let extra glaze drip off before placing them onto a rack.

Let the Glaze Set

  • Allow the glazed cakes to rest for fifteen minutes. The glaze will harden slightly and become beautifully sweet.

Garnish and Serve

  • Add extra lemon zest on top if desired. Serve the lemon blossoms fresh for the best flavor and texture.
