Ingredients

  • 1 pork tenderloin about 500–700g
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic minced
  • 1 tablespoon brown sugar
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme or rosemary
  • 1 tablespoon mustard optional

Instructions

Prepare the pork

  • Trim excess fat from pork tenderloin. Pat dry with paper towels to help create a better crust.

Season the meat

  • Mix salt, pepper, paprika and herbs. Rub evenly over pork to coat all sides.

Sear the pork

  • Heat oil in a skillet over medium-high heat. Sear pork on all sides until golden brown.

Add garlic butter

  • Add butter and garlic to pan. Spoon melted butter over pork for extra flavor.

Prepare glaze

  • Mix brown sugar and mustard in a small bowl. Brush this mixture over the pork evenly.

Roast in oven

  • Transfer pork to baking tray. Roast at 200°C for about 20 minutes until cooked through.

Check doneness

  • Use a meat thermometer. Cook until internal temperature reaches about 63°C for juicy results.

Rest and slice

  • Let pork rest for 10 minutes. Slice into pieces and serve warm.

Notes

  • Do not overcook pork to keep it juicy
  • Use honey instead of brown sugar for glaze
  • Add chili flakes for a spicy twist
  • Marinate pork for deeper flavor
  • Use fresh herbs for better aroma
  • Slice against the grain for tenderness
  • Add a splash of lemon juice for freshness
