Ingredients
  

  • 1 prepared pie crust
  • 8 slices bacon
  • 1 small onion finely chopped
  • 1 cup shredded Swiss cheese
  • 4 large eggs
  • 1 1/2 cups heavy cream
  • 1/2 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions
 

Preheat oven

  • Preheat your oven to 375°F and place pie crust in pie dish.

Pre-bake crust

  • Bake crust for 10 minutes until lightly set.

Cook bacon

  • Fry bacon until crispy and crumble it.

Cook onions

  • Sauté onions in bacon drippings until soft.

Add filling

  • Spread bacon, onions and cheese into the crust.

Make custard

  • Whisk eggs, cream, milk, salt, pepper and nutmeg.

Pour mixture

  • Pour egg mixture over bacon filling.

Bake quiche

  • Bake for 35 minutes until center is set.

Rest and serve

  • Cool for 10 minutes before slicing.

Notes

  • Add spinach for color
  • Use Gruyere cheese
  • Try ham instead of bacon
  • Do not overbake
  • Use homemade pie crust
  • Add mushrooms
  • Serve warm or cold
