Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cocoa powder
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 tablespoon red food coloring

For Cream Cheese Frosting:

  • 8 oz cream cheese softened
  • 1/2 cup butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners and set aside.

Mix Dry Ingredients

  • In a bowl, combine flour, sugar, baking soda, cocoa powder and salt. Mix well so everything spreads evenly.

Mix Wet Ingredients

  • In another bowl, whisk oil, buttermilk, eggs, vanilla, vinegar and red food coloring until smooth and well blended.

Combine Mixtures

  • Slowly add dry ingredients into wet mixture. Mix gently until smooth. Do not overmix to keep cupcakes soft.

Fill Cupcake Liners

  • Pour batter into liners, filling each about two-thirds full. This allows space for cupcakes to rise evenly.

Bake the Cupcakes

  • Place in oven and bake for 18 minutes. Check with a toothpick. It should come out clean when done.

Cool Completely
