Ingredients

  • 250 g breakfast sausage
  • 2 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • Salt to taste
  • Black pepper to taste
  • 1/2 teaspoon crushed red pepper optional

Instructions

Cook the Sausage

  • Heat a skillet on medium heat. Add sausage. Cook until browned and fully cooked. Break into small pieces while cooking.

Add Butter

  • Add butter to the cooked sausage. Let it melt completely. This adds richness and helps build the gravy base.

Add Flour

  • Sprinkle flour over the sausage mixture. Stir well. Cook for one minute to remove the raw flour taste.

Pour in Milk

  • Slowly add milk while stirring continuously. This prevents lumps. Keep mixing until the gravy starts to thicken.

Simmer the Gravy

  • Cook on low heat. Stir often. Let it simmer until thick and creamy. This usually takes 5–7 minutes.

Season the Gravy

  • Add salt, black pepper and red pepper if using. Taste and adjust seasoning as needed.

Serve Hot

  • Remove from heat. Serve immediately over warm biscuits for best flavor and texture.

Notes

  • Use spicy sausage for extra flavor.
  • Add garlic powder for more depth.
  • Use half-and-half instead of milk for richer gravy.
  • Stir constantly to avoid lumps.
  • Add cooked bacon for a smoky twist.
  • Use gluten-free flour if needed.
