Ingredients
  

  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 1 packet ranch seasoning mix
  • 1 can black beans drained
  • 1 can kidney beans drained
  • 1 can pinto beans drained
  • 1 can whole kernel corn drained
  • 1 can Rotel tomatoes
  • 1 can diced tomatoes
  • 2 cups beef broth
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions
 

Heat the Pot

  • Place a large pot over medium heat. Add olive oil and let it warm.

Cook the Onion

  • Add chopped onions and cook until soft and slightly golden.

Add Garlic

  • Stir in minced garlic and cook for one minute until fragrant.

Brown the Beef

  • Add ground beef and cook until no longer pink. Break it apart while cooking.

Drain Extra Fat

  • Remove excess grease from the pot to keep the soup lighter.

Add Seasonings

  • Mix in taco seasoning and ranch seasoning until beef is well coated.

Add Beans

  • Pour in black beans, kidney beans, and pinto beans.

Add Corn and Tomatoes

  • Add drained corn, Rotel tomatoes and diced tomatoes into the pot.

Pour in Broth

  • Add beef broth and stir everything well.

Simmer the Soup

  • Bring the soup to a boil. Lower heat and simmer for 20 minutes.

Taste and Adjust

  • Add salt and pepper if needed.

Serve Hot

  • Ladle soup into bowls and add your favorite toppings.
