Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup sliced carrots
  • 1 cup chopped zucchini
  • 1 small onion diced
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can cream of mushroom soup
  • ½ cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup crushed butter crackers
  • 3 tablespoons melted butter

Instructions

Prepare the Vegetables

  • Wash and chop all vegetables into bite-sized pieces. Keep pieces similar for even cooking and better texture.

Preheat the Oven

  • Preheat oven to 350°F. Grease a baking dish lightly with butter or cooking spray before filling.

Cook the Vegetables

  • Boil broccoli, cauliflower and carrots for five minutes. Drain well and let them cool slightly before mixing.

Make the Creamy Mixture

  • Combine sour cream, mushroom soup, mayonnaise, garlic powder, salt and pepper in a large mixing bowl thoroughly.

Add Cheese and Vegetables

  • Stir vegetables, zucchini, onion and shredded cheese into the creamy mixture until everything coats evenly.

Fill the Baking Dish

  • Spread the vegetable mixture evenly into the greased baking dish using a spoon or spatula carefully.

Prepare the Topping

  • Mix crushed butter crackers with melted butter. Stir until crumbs become moist and slightly buttery.

Add the Topping

  • Sprinkle cracker topping evenly across the casserole surface. Cover all edges for a crispy baked finish.

Bake the Casserole

  • Place casserole into the oven. Bake for thirty-five minutes until bubbly and golden brown on top nicely.

Cool Before Serving

  • Remove casserole carefully from oven. Let it rest five minutes before serving warm with your favorite dishes.

Notes

  • Use fresh vegetables for the best flavor and texture.
  • Drain vegetables well to avoid watery casserole.
  • Add cooked chicken for a complete meal.
  • Use mozzarella cheese for a milder flavor.
  • Add red pepper flakes for a spicy version.
  • Replace crackers with breadcrumbs for extra crunch.
  • Mix different vegetables like peas or corn for variety.
  • Use low-fat sour cream for a lighter casserole.
  • Add bacon pieces for smoky flavor.
  • Cover with foil if the topping browns too quickly.
