Ingredients
  

  • 1 lb ground beef
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz diced tomatoes
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper optional for heat
  • 1 tbsp olive oil

Instructions
 

Cook the Meat

  • Heat olive oil in a large pot. Add ground beef. Cook until browned. Stir often for even cooking.

Add Onion and Garlic

  • Add chopped onion and garlic to the pot. Cook for 3-4 minutes until softened.

Add Bell Peppers

  • Mix in red and green bell peppers. Cook for another 5 minutes until slightly soft.

Add Spices

  • Sprinkle in chili powder, smoked paprika, cumin, salt, black pepper, and cayenne. Stir well.

Add Tomato Paste

  • Mix in tomato paste. Cook for 2 minutes to release flavors.

Add Tomatoes and Beans

  • Pour in diced tomatoes, kidney beans, and black beans. Stir everything together.

Add Beef Broth

  • Pour in beef broth. Mix until ingredients are evenly combined.

Simmer the Chili

  • Bring to a boil, then reduce heat. Cover and simmer for 1 hour. Stir occasionally.
